If I have 7 days worth of Fastpasses booked. On the first day of Fastpass usage, at what point can I book Fastpasses for Day 8 of my trip (immediately after the first set of 3 passes are used or the following day )?

Yes, as soon as you tap for FP+ number 3 on day one of your trip. But that's only if you're limited to 7 days of FP+. Are you on property or off? AP holder?

You can book for length of your stay at 60 days. It's the same as any other on site guest

Off site AP's are limited to 7 days within a 30 day period

I'm a bit confused because as you can see ,the top image (from Disney site) says Length of Stay or up to 7 days. The second image from another site says up to 10 Days

For AP holders it's 7 days or length of stay, whichever is greater.

The Booking Windows post in the FP FAQ covers this.

As I said, its a bit confusing because I have now looked at 3 different parts of the WDW website and FAQ's and seen 3 different pieces of info. Including this one which does not mention 7 days,does not mention 10 days ,does not mention "whichever is greater' and does not mention "up to" anything.

It's really not confusing at all. If you are on site, you get FP for every day of your on site trip. They only put a limit on AP holders that don't have on site reservations and that is to prevent local AP holders from keeping constant FP.
