I know that you can't book your 3 daily fast passes at different parks, but can 2 people in your family book all 3 of their fast passes for one day at Animal Kingdom and the other 2 people in your family book their fast passes at Magic Kingdom?

Yes you can do that. You get to pick who is in the fast pass party from your family list. Also, you don’t have to choose all three fast passes.
You could choose one or two for one park if you intend to park hop. On the day of you can look for a fast pass at the park you will hop to as soon as you tap in to your first fast pass ride. You can also try to get a tier one ride at the next park even if you had a fast pass for a tier one ride at the first park. Subject to availability.....refresh, refresh, refresh.
 
Each individual can book their 3 FP+ in whichever one park of their choosing.
So yes 2 people could choose to book their initial 3 at AK and the other 2 could choose to book their initial 33 at MK.
 
Just keep checking each time slot after that third. It Really works!! We got Everything that way. Despite the little blurb that there were no more fast passes available. Just refresh and keep checking!!
