I am taking a trip in February with my family of 15. Staying offsite so I can't book any till thirty days out. Can I book for the whole trip on that first day, or do I need to do each day as it comes up?

Each day as it comes up. Don't be afraid to break your group up and try for overlapping times since you have big group.
