If we want to try and go to Fantastmic (6:30 PM show) and then do Shula's (at Swan/Dolphin) for dinner at 8:30 PM, is that realistic? We will have a car ...
It's more than realistic. I'd also bet that you would get there faster by walking than you would by taking a car (plus, the Dolphin will charge you for parking, although I hear they will now validate if you are dining at a "signature" restaurant).
I don't know how long you want to leave your car parked at the Studios though.

Maybe things have changed then, because Boardwalk is a destination as well as a resort and I've parked there before to go to ESPN Zone with no problem.

The Boardwalk is a resort and it's no different then the other Deluxe Resorts because it still has restaurants and stores, so it's still not a destination. There is no problems with parking your car there because you are going to eat at the ESPN Club, however it's not ok to do that so you can have easier access to Epcot or Hollywood Studios.
