I found this information about how many Fantasmic shows there are per night:

Sunday, Monday & Wednesday-Saturday at 9:00 & 10:30pm
Tuesday at 9:00pm

25 minute shows (weather permitting)

Seating begins 120 minutes prior to showtime. Please remain with your party at all times. Please be aware that some audience members may get wet during the performance.
