Is there a way to "unfriend" someone.. or do I just "hide" them?

You can do both. If you unfriend them you can alway pretend you had no idea how that happened. You can also set it up that some people do not see everything you post.

Halfway down their profile page you can select "remove from friends". Hiding so you don't see them on your news feed works just as well...but if you don't want them to see your page edit your profile privacy settings.
