F&W gluten-free with modifications?

Hi all! We are preparing for our first Food & Wine Fest, and our DD needs GF options. I can easily fine the published list of all the items that are inherently GF, but I believe (hope?) many other items can be modified to make them GF. For example, is the Raclette safe if they leave off the bread, is the Piri Piri Shrimp ok without the cous cous, etc? Does anyone have any experience with this year's fest going GF? Let's make this thread a list!

FairyTale Foodie always does a thorough review of the festivals gluten-free offerings (and what is but just is not marked or can be modified) and is amazing!!

You’re welcome! Her reviews have been super helpful to me!! I would never have known the chocolate thing in Ireland was gluten-free (possibly without the sauce) without her review last year since it is not marked!!
