FW does NOT fully "close" at 7pm on ANY night of the year.
The following attractions stay open until 9pm EVERY night:
Space Ship Earth
Mission: Space
Test Track
Soarin'
and sometimes, Turtle Talk and the Seas Pavilion
And on EMH nights, they (and a couple more) stay open until 12 midnight along with certain WS attractions. (12:30am at Christmas season).
Each and every attraction that is listed as being a part of Evening EMH at the Epcot theme-park at Walt Disney World, will stay open until approximately Midnight.
If, on occassion, Illuminations is scheduled for a 9:30 PM Eastern time presentation and the Epcot theme-park is scheduled to close at 9:30pm Eastern time, then each and every attraction that is listed as being a part of Evening EMH at the Epcot theme-park at Walt Disney World, will stay open until approximately 12:30 AM (in the morning) in the eastern time zone.
This includes each and every attraction in Future World that is listed as being a part of Evening EMH at Epcot.
This includes each and every attraction in World Showcase that is listed as being a part of Evening EMH at Epcot.
On various dates, there will be certain other attractions that may be open during EMH as well.
The American Adventure in World Showcase is scheduled to have only a limited number of performances when it is a part of Evening EMH at Epcot.
You need to check with the "Times Guide" handout (that is available at many locations around Epcot) to make sure that you arrive in time to see one of these shows, if you intend on viewing it during Evening EMH.

I always go to AM EMH (virtually every day of the trip that we did not do a PM EMH late the night before)... never ONCE regretted an AM EMH... they are amazingly empty and easy to ride the open attractions.
If that park THEN starts to fill 2 to 3 hours later... WHO CARE'S?
Were happy with "doing" that park for the day and we can HOP elsewhere or do lunch and take a rest until later.
PM EMH's are a mixed bag. I've been when they were PACKED... but on other nights (sometimes within the same trip), the crowds were basically so low that it was like "free rides" on all the open attractions.
Those who have attended PM EMH's and say that "they are TOO CROWDED" are right... but ONLY for the nights they may have attended.
I can say, from personal experience, that they CAN be EMPTY, FULL or in-between often within the same week.
It can change so fast (either way), that saying it was "like X" on a given night, can be meaningless on another night in the same time-period. So, you simply don't KNOW unless you go.
And, considering EMH's are FREE to attend... if its busy, just people-watch or hit the exit (where ELSE are ya gonna go at 10pm, anyway?)
But if its not busy... you're ALL SET for EXTRA FUN!
