Extra Dining Credit...What Would You Do?

Hello everyone.
My best friend and I have decided to go on a short trip to Disney World this January to take advantage of free dining! We're only spending three days in the parks.

Here's my dilemma. We won't be landing in Orlando until almost 7 PM, which means it will be 8 at the earliest before we get to our resort. We're staying at POFQ, and while Riverside has a sit down restaurant it doesn't appeal to me at all. I don't think we'll be able to squeeze in a sit down meal our first night, so that leaves us with an extra credit.

I have dinner at Boma, lunch at Liberty Tree Tavern, and dinner at Via Napoli booked, and I am pretty excited about all of those. But now I'm wondering if I should trade lunch at LTT for a signature dinner, or if I should add a one-credit meal on one of the days instead.

What do you think?

1/10 Magic Kingdom - LTT Lunch
1/11 Animal Kingdom - Boma Dinner
1/12 Epcot - Via Napoli Dinner

Since you're at POFQ, I would take the boat across to DTD and eat there. They have late ADRs, and wouldn't require a lot of travel. I've heard a lot of good things about Raglan Road, plus they have music at night.
 
Or, you could see if you could replace BOMA with Jiko, same area but uses up that extra credit.
 
What day leaving? Could you do breakfast that morning at a resort before you depart?
 

If the LTT lunch is very late (or can be moved later in the day), how about breakfast at CP before rope drop? Great way to start an MK day!

Same idea, different day: pre-rope-drop breakfast at Tusker on your AK day.

Final alternative: a 1 TS lunch on your Epcot day, since Epcot has so many fun places to choose from.
 
We have the same "dilemma," as we arrive at 10pm on our first night. We will use the extra ts credit for dinner at California Grill!
 
I think I'd just add maybe a TS dinner on to your Magic Kingdom day, unless there's a signature restaurant you're really dying to try.
 
We have a similar situation; we arrive at 9:30 PM. We plan to use a CS credit if the Food Court at Pop is still open when we get there and we're using the extra TS credit for the Hoop Dee Doo dinner show.

This is what I would do as well if I had the time. We always like to have a nice breakfast (generally at 'Ohana) for our last day send off.
