Will EEE likely come back by February? Will it still be Epcot on Mondays and MK on Wednesdays?

Extended Evening Hours never ended. They simply change parks during party season (no MK after mid-September). Last February, it was Epcot on Mondays and MK on Wednesdays, and I would expect the same in 2025.

What do they do at Christmas when there are both MVMCP and Jollywood nights?

For the first four weeks of December this year, they are doing Extended Evening hours at Epcot on Mondays and at Animal Kingdom on Wednesdays. November is much the same, but with AK on Thursday November 14 instead of Wednesday November 13.
