Experts: Which day is best?

We'll be spending Sat May 8th and Sun May 9th at Universal. The park hours are:
Friday US 9-6pm, IOA 9-5pm (Grad night)
Saturday US 9-6pm, IOA 9-10pm
Sunday US 9-6pm, IOA 9-7pm (Mother's Day incidently)

I was planning Saturday at IOA (because it's my favorite) and Sunday at US (also because I want to leave at 6pm to transfer to WDW and don't want to be tempted to stay later.) We could parkhop.

Will it be busier at IOA Saturday because it's open so late? (By far the latest closing time of the month.) Will it make any difference? We will have express access, but we'll also have a lot of little kids doing little kid stuff.

What's my best strategy here? Thanks!

If you're going to have Express Plus passes, the crowds should be of no concern. Just go and enjoy yourselves.
