Excursions Not-to-Miss?

Are there any excursions you wouldn't want to miss?
...I'd love to do the dolphin thing, but with six of us, "no-can-afford." Since we will be doing the 4-day Wonder Cruise after 5 days of parks (4 WDW, one at Universal), I was thinking of using the cruise as kick back time and just relaxing. But I wouldn't mind doing ONE excursion...

I like the snorkeling options. Are any better than others?
The Atlantis thing sounds good, too. I've read the posts on the amount of walking involved and I think if we do it, it would be just DH and I.

Hey onlysons.....you live in Vegas? We love it there...try to go a couple times a year...we live in No. Calif. so it's not that far for us.
