Evaluate my touring plan?

We're headed down in August, so I TOTALLY understand that EMH schedules may change - just built out a tentative schedule based on info currently available. This trip is hubby and I, DS12 and DS10.

We have 7 day park hoppers, plus we plan to get MNNSHP tickets. We are not the type to normally take resort breaks during the day, and the heat/humidity doesn't bother us. We do better just taking frequent quick inside breaks throughout the day and keeping hydrated and sunscreened :)

We are flying down the day before check-in at the resort, and plan on flying home the day after check-out. That allowed us to use a full park day on arrival to the resort, and take some rest time on MNSSHP day.

Here's the current tentative plan:

Sunday: Late flight into MCO, landing around 11pm. Have a hotel near the airport for the night.

Monday: Check in Day at resort, Hollywood Studios (will just have CS meals for dinner and pack some food for lunch. The hotel we are staying at near the airport on Sunday night has free breakfast in the morning). Looking into whether bell services can hold our luggage if we arrive early in the morning that day, I'm pretty sure they can and will just bring our stuff up to our room when it's ready.

Tuesday: Resort day/swim/MNSSHP at 4pm. (Breakfast buffet at one of the resorts, CS dinner in MK during the party)

Wednesday: Epcot during the day (late-ish morning arrival) possible evening EMH at MK after dinner (shooting for a TS reservation at one of the MK resorts). The only bummer about this is missing the evening show at EP, but my kids aren't big fans of Epcot and tend to get fireworks-exhausted after a few days LOL)

Thursday: Possible morning EMH at Epcot to squeak in a few things we missed the day before, then AK for the rest of the day. (Thinking about Garden Grill breakfast, then possibly Tusker House dinner)

Friday: MK all day until 6pm (possible morning EMH). We have another MK day scheduled so I don't feel pressured to rope drop, and this is a party day. (want to try for BOG breakfast, then leave the park at 6 and spend some time at FW before HDDR that night)

Saturday: Possible morning EMH at AK and spend the entire day there. A lot would depend on our energy levels/ability to get up early. I considered EMH, then bus over to AKL for late-ish breakfast at Boma or Sanaa, then return to the parks for the rest of the day.

Sunday: MK all day. Probably stick to QS meals/packed lunches after a few days of multiple TS meals.

Monday: Hollywood studios all day. this is my kids' favorite park, so we would definitely end the trip with all things star wars :) (either Sci Fi or 50's prime time for late afternoon supper)

Tuesday: check out of resort, hang out at Disney Springs for the afternoon. We have a hotel near the airport for this night, so we can just head there at check in, relax and swim, and go to bed early.

Wednesday: Flight home at 7am
 
Sounds pretty great. One thought—the Illuminations show at Epcot is slated to end "at the end of summer 2019" (that's as specific as I can find). I imagine August still counts, but if by any chance the new show has started, that could swing things away from skipping it?

It might - but then it might also motivate me to plan a kids-free weekend trip with the hubby while the interim show is going on LOL.

I wish my kids enjoyed Epcot more - and we're trying to plan things that will keep them engaged (character meet and greets, The Seas, the Agent P scavenger hunt, pearls in Japan, etc) outside of rides. I figured if the EMH morning works out we can focus that time on the couple of rides they like there, and getting my husband on Spaceship earth a couple of times before they close it down for renovations.
