How easy is it to find Eurostar at at pancras then find it again for coming back from Disneyland?

very easy, I did it last November with my DD 6 on my own didnt find it hard at all.

My option is wait for easyjet flights to fly from Newcastle which won't arrive to Paris till late on or book train tickets to travel from Newcastle to London to get Eurostar, how early do you suggest getting to the place Eurostar departs from?

We normaly check-in 30 minutes before departure at St Pancras International, you may want to arrive a bit earlier if you've got lots of luggage or want to do some last minute shopping. The Eurostar terminal is very well sign posted.

At Chessy Marne la Vallée we normaly use the Disney Express service so we get there about 40 minutes before departure to give us time to collect our bags from the Disney Express Luggage Desk.

Can you only get the express luggage if you book your travel with Disney or can you pay as an extra?

No you can book it direct with Disney, just call them and add it to your booking. Or you can just book it for the return journey with your on-site Disney hotel.
