escape wedding on a sat -minimums ???

please help me to understand the weekend escape package minimum requirements.
we were booked in on a memories package , and then many family members decided to come to our wedding bringing us to a total of 19 people , however, everyone is already booked to be in on the weekend only.
this would mean we would have to hit the 7500 minimum , can anybody break this down for me ?

My understanding is that the cost of your Escape package counts toward that $7500 min. then you can meet the rest through food and bev or other elements provided by Disney (additional floral, photography, etc.).

except they have a special running now , Mon-Thursday, 8am or 10am at SBP , YC garden gazebo , Sunset Point or WL for 3800.00
I am happy to say that we took the jump and upgraded to an Escape wedding at SBP
