We’re going in July (21) is there a chance that Epic will be so busy that it’s closed due to capacity? Is that even a thing?

Yes it's definitely a thing however no one really knows. I would think that most people would agree that, at least through summer, there will be capacity closures.

Yes, closures due to capacity can happen. You can increase your chance by staying on site and get in line super early. You can also buy tickets for multiple days. We're going at the grand opening and not worried at all.

We are going the same week as well! Purchased tickets for Monday the 21st and Wednesday the 23rd. Definitely going to need a down day in between! But, as others have stated, we are planning to arrive super early, so I'm not worried in the least of not being able to get in. We are staying at Stella Nova, so planning to just walk.

Universal have done their best to keep people away during this summer, like making multi days at Epic very expensive and not publishing prices until very close to opening. So who knows, given also the general slowdown in travel and not great consumers confidence, this summer might actually be a good time to visit.
