Would you choose Epcot on a Thursday with AM EMH or Epcot on a Friday during the Food and Wine Festival? Or do you think attendance would be about the same both days?
My current plans include Epcot on a Friday...

I would choose a Friday during F&WF. Then you get to explore the entire park. To me, Friday's tend to seem a little busier.

But the EMH might bring in the crowds as well?
We made the mistake of going to a park once during it's EMH day and it was insanity.

Thursday for sure. Have been to Epcot on morning EMH day a couple of times in recent years and have not had any crowd issues. Food and Wine crowds on Friday nights and weekends would be the much less desirable option for me.

If you enjoy a late night, though, Epcot is open until 10:00 PM on Fridays and Saturdays during F&W. Illuminations plays at 10:00 too.

I going to try to work my way up to staying awake past 9pm before our trip ;-)

Are you staying onsite? If so, just get up early and make it in time for that EMH. You'll be way ahead of the game and ready to hit World Showcase at 11:00. WS will stay relatively uncrowded for a couple hours too. Then I might be tempted to take a resort break, a ride the loop monorail break, hop on the boats to HS and just stay on to come back break, or a mid-afternoon TS break. There are also all the inside movies around WS which can give you a bit of a break from the crowds. You'll be fine.

If you're not onsite, make your FP+ for the morning and do the same thing. Enjoy!

Yes, we are staying onsite.
Great advice! Very helpful, thank you!

Thur, we did a weekend October food and wine and we couldn't even push our stroller through ws.

Thursday, for sure. Friday evening, Saturday all day and Sunday until early evening are insane and not very fun, IMHO

We stay on site and always follow the morning EMH, as you can get so much done. We run (with half the crowd) to Test Track and have a fast pass for Soarin' as they are tiered, or vice versa, as both have long stand by lines all day, so we get them done early.

I'd go both days, seriously I go every year during F&W and spend a part of every afternoon/evening at Epcot. I've been there on Friday nights and while it was busier than the week nights, it wasn't unbearable for me.

I would pick Friday, but I loved F&W when we went, and we have never done morning EMH for any park LOL.
I also didn't find WS unbearable on the (opening) weekend nights when we were there last year.

Thursday would get all of my votes! lol EMH at EPCOT during F&W is worth waking up for, as you can do a lot and then graze/browse around the world at a much more leisurely pace. I really really like F&W, but I really really hate going there on a weekend evening.
