These are my tentative plans for Epcot. One AM EMH and one evening EMH. Just my DH and Myself. Thoughts? Opinions? What are we missing?

I would definitely suggest these in addition to what you have listed:
*See the film in Canada & tour the beautiful gardens there.
*Tour the Stave Church in Norway
*Try a goodie from the patisserie in France
*See the drummers in Japan

These are just a few, but if time allows, really take in each country's pavilion. There are some really amazing architectural elements & some good street performers.

Also, pick a spot for Illuminations and be in place at least by 8:40.
