We took our 3 kids and my mom here once -- the kids still talk about "that place where they throw food at you"!

(referring to the way the chefs toss the food up in the air, etc.)
If you want to "know before you go", then try a Benihana's or Shogun or similar Japanese steak house locally! THe kids had steak or chicken, as I recall, and while waiting, the hostess made origami birds for them. The server at our table also made the chopsticks more kid-friendly (she used a folded piece of paper and rubber band and turned them into spring-loaded tweezers -- much easier for the kids to manage, and they thought this was WAY cool). Our only complaint (relatve to other similar steakhouses we have eaten in outside WDW) is that our server was quite reserved by steakhouse standards. But that may be the exception, not the norm! He was pleasant, just not "showy", especially compared to the chef we had at a Shogun restaurant who got the kids all chanting , "Go Dan! Go DAn! Go Dan!" as he flipped shrimp and such!
To answer your ??, yes, you choose your "meat" (steak, chicken, scallops, shrimp, etc., or some combo thereof). You can also get sushi. Kids can either get steak or chicken or -- I think - shrimp, done Teppan style, and the other poster was right -- I recall fruit being served with it. THe kid's meal comes with ice cream too. There is a "Donald's meal" or some such thing that is grilled chicken with veggies (no fruit). We are actually thinking about doing this again on our trip this year -- our kids will be 9,7,and 4, and the food type appeals to them. They actually LOVE steak, and get really weary of chicken nuggets after a while! DS 9 loves the rice, too!
