Need a table service and counter service suggestion. Also, is there anywhere to get a GF snack for breakfast?

Is Epcot your only real choice for that day?? I would avoid against it since most of the food there is operated under their own chains as opposed to being 'disney'. Moonie #1 and I (Moonie #2) are both GF and we both got sick after an unfortunate incident at Epcot, our email to Disney after is how we found out that Epcot isn't as strict with their special diets :|
 
Sunshine Seasons in The Land is generally considered one of the places with some of the best CS in any of the parks for folks with food allergies. They have so many options in general that it's easier for the chefs to make or modify food to make it allergy and/or intolerance-safe. (Sunshine Seasons is Disney owned & operated.)

It's World Showcase where you have the most to worry about. The majority of food locations there are not Disney owned & operated. That said, I know we have plenty of folks who are GF (or have other allergies/intolerances) and have had luck with locations around World Showcase. This includes some of the locations that are not Disney owned & operated. I can think of positive reviews from Mexico, the Rose & Crown, and Le Cellier.

You might want to look for reviews from clanmcculloch. She and her family have a much longer list of allergies/intolerances than just GF, but she's written wonderfully detailed reviews of places they've eaten, including all over EPCOT.

Yes we are going to spend the day at Epcot... :) I won't visit Disney without doing my favorite park.

Sunshine Seasons (in The Land) is a GREAT place to find GF snacks - and a good breakfast, as well. They have G/F cookies and such for sale out on display.

I also had a GREAT G/F meal at the Garden Grill restaurant, as well as dinner at the Coral Reef restaurant.

Notice that these are all found in Future World, because, as others have pointed out, it's riskier to find true G/F meals in the World Showcase.
 
I think we will do sunshine seasons for lunch and a snack, and then go off property or to a resort for dinner:)
 
We had a great GF experience in Germany. The chef even made my daughter a special piece of fish since what was on the buffet was not safe.

We don't eat breakfasts in the parks so I really don't know what options are available. We've gotten morning snacks, but not breakfasts. We really like the roasted nuts at a cart near the bathrooms on the Land side of the building with Character Connection. In Sunshine Seasons they have the typical GF baked goods like cookies and brownies but I honestly have no idea if they have breakfast type baked goods or not. They'd be your best bet. I know you can get safe GF hot breakfast there but I don't know about baked goods.

For CS I'm another huge fan of Sunshine Seasons. There are just so many great options there. The entire grill station is GF and there are some other wonderful options, my favourite being the seared tuna over salad (it normally comes over noodles but we get it over salad). We've had good experiences at Liberty Inn (US pavilion) and the Mexico pavilion. This trip we'll be trying Electric Umbrella for chicken tenders in Future World. I've read good reviews of GF meals in other countries but the one that stands out the most is Morocco. Because of our other allergies this doesn't work for us but if we were only gluten free I'd try it in a heartbeat.

There are plenty of safe TS options in Epcot. The ones owned by Disney are Coral Reef, Garden Grill, LeCellier, Rose and Crown, Biergarten, and Akershus. At Biergarten, the majority of the buffet is already gluten free which is wonderful (the chef will take you through the buffet to let you know which things are safe and will prepare an alternative for a few of the things that aren't if you ask). We've had great experiences at Akershus and LeCellier and decent experiences (100% safe) at Garden Grill and Coral Reef. I'd love to try Rose and Crown one of these days but there's nothing there that would be easily modifiable to suit my 13yo's list of allergies that she would actually like so we haven't tried it. I wouldn't hesitate though if the menu looks good to you. For non-Disney owned restaurants, lots of people love Teppan Edo. You can actually get gluten free food at a hibachi style restaurant. If you can't get this at home then it's definitely worth the experience at WDW.
