Epcot and Water Park Question

We have the Water Park and More option on our Spring Break trip.

Currently my plan was to have a relaxing morning, head to Blizzard Beach and then stay through lunch.

Come back to resort, change, and head to Epcot. Do two fast passes. Eat dinner at 5pm at Garden Grill. Then explore the countries and FP for Illuminations. We have another morning/afternoon in Epcot.

What are your thoughts on this change:

Head to Epcot at park opening.

Ride rides and use two Fps, and then lunch at Garden Grill at 11:30am. Take break and head to either water park. Head to hotel, shower, change. Come back to Epcot in evening to eat from booths at F&G and use FP for Illuminations. I have a test track FP for another day.

Is that too much?
 
IMHO Epcot is a full-day park.. But if you really must then I would say stick with your original plan of doing the Water Park first thing in the morning and then spending your afternoon/evening at Epcot. :)

I love Epcot too. It is one of my favorites! We will have our 2 yo and 6 yo with us. We will be going back on another day! :)
