Which restaurants onsite at US and IOA (if any) are discounted with the Entertainment Book and approximately what type of discount is available? Thanks.

I don't know of any resturants, but the hotels offer a booking discount rate with entertainment book. I have been lucky enough to book that rate each time i've stayed.

Trattoria del Porto at the PBH is the only restaurant that I know of. Buy one Lunch or Dinner Entree, get one free. Up to a $16.00 value.
