We have a MAJOR Einsteins lover at our house too! Since the "phenomonon" is so new I'm not sure if there is partyware, etc. out yet...but you could come up with some creative things on your own. Primary colors, especially red, come to mind. DOes your DD have a favorite episode? You could play off of that.
Here are some random thoughts for activities:
-coloring sheets from playhousedisney.com
-play some classical music (or "Einsteins music" as it is called at our house) and listen to identify different instruments and have different instrument cutouts or posters...or maybe do it like a bingo thing.
-do a mission...depending on where you live you could do something inside or outside and do something like a scavenger hunt and involve a piece of art...if you live in a large community your library may have laminated posters of famous pieces of art that you can check out.
-do a "red light - green light" type of game but include patting and blastoff, etc.
