Eggplant Parmigiana, love it or hate it?

I make a mean Eggplant Parmigiana, if I do say so myself! It's soooo good!

Do you like it? If you've never tried it before, why not?

I am growing an eggplant in my backyard. Can't wait until they are ready! :)

I haven't had it in a while..

I do have to say, my mom made it different than others. She would sort do it in the crockpot or steam the eggplant instead of frying it.

So when I went to a restuarant to order it, imagine my surprise.. breaded, and tasting better!

Not that my moms was bad, but fried is much better.
 

I love it! Only I like it much better when it has ricotta cheese too!
 
Don't like eggplant at all. But make me a chicken parmesan and I'll be over.;)
 
Never tired it, but I can say I'm not a big fan of Eggplant.

Don't like it. It's one of the few veggies I just can't stomach. I'll take some chicken or veal parmigiana, though :D .
 
Love it! My mom always made the best. Now I've got a craving for it!
 
DH hates it though, so being he is the cook in the family we don't have it much!
 
:crazy2: :crazy2: :crazy2: Yuck. I can't stand the look of eggplant never mind eat it. I ordered chix parm once and took a bite of it before I realized it was eggplant...talk about ruining your meal.

I'm sure yours is very good though.::yes::
 
Eggplant parm is my favorite. I can't eat the seed though :(
 
Love it. I had a very good dish at a local Italian Restaurant on Wed. Eggplant Vegetale.
It is like egg plant Parmesan, but 2 layers of the fried eggplant, with a layer of sautéed veggies in the middle. I requested their rosatella sauce (light cream sauce with chunks of tomatoe) in place of marinara
 
Love it! And I make a pretty mean EP as well. I'd love to have an EP cookoff sometime. It could only bring good things!
 
I can never get enough eggplant in any shape or form. I always order eggplant parmigiana when I see it on the menu. And I used to make eggplant meatballs from a recipe in one of the Frugal Gourmet cookbooks. Yum. Is it lunchtime yet?

Love it. I love eggplant anyway it is prepared. It's one of my favorite foods.
 
I found this recipe online. It looks like the one I was talking about:

EGGPLANT MEATBALLS

1 large eggplant, peeled and diced
2 lbs. lean ground beef
1 cup parmesan or romano cheese
3 cloves garlic, crushed
1/2 cup bread crumbs
2 eggs
1/2 tsp. basil
Salt and pepper to taste
2 tbs. olive oil
1 cup spaghetti sauce
3/4 lbs. Muenster cheese, thickly sliced

Place the diced, peeled eggplant in a saucepan with enough water to cover. Bring to a boil, reduce the heat and simmer for 10 minutes until the eggplant is tender.


Meanwhile, mix the beef, garlic, breadcrumbs, eggs, basil, salt, pepper and 1/2 cup parmesan cheese in a bowl. Drain the eggplant and allow it to cool. Mash the eggplant and mix it to the meatball mixture. Form into 18 meatballs.


In a large frying pan brown the meatballs on all sides. Place the spaghetti sauce in the bottom of a large baking dish. Set the meatballs in the sauce. Top with the remaining parmesan cheese and finely with the thickly sliced Muenster cheese. Bake in a 375 degree oven for 20 minutes or until all is hot and bubbly.
 
Love it!

Although it can be quite yucky if the eggplant isn't prepared right.
