Ok Disers, I need your egg salad recipes. I know you have to have some good ones. Especially LindsayDunn-you've got great recipes for everything!!! :thumbsup2

I just usually take 6 hard boiled eggs and add a heaping tablespoon of mayonaise, a heaping teaspoon of sweet pickle relish, a dash of dried yellow mustard, and a dash of garlic salt. I mash it all together and let it sit in the refrigerator for a couple of hours in order for the flavors to meld.

It's really not much of a recipe. Just dump the stuff together and stir.

I never measure, so these are estimates...but I always taste & adjust anyway.

1/2 c mayo (I use Miracle Whip)
1 Tbl brown mustard
1 tsp wine vinegar (or cider, but not white)
1 tsp sugar or equivalent sweetener
1/2 tsp ground celery seed
2 - 3 Tbl milk to thin it if desired

Then mash the eggs & mix in the dressing...not the other way around...mostly because I'm never sure if it's enough or too much for the number of eggs. :confused3

For some reason, I can not make egg salad - I think its because I make the best devilled eggs in the whole wide world and the recipes are so similar - that I just make my egg salad just like a devilled egg. So I make the devilled eggs and my mom makes the best egg salad in the world. I just took the DKs to visit them in Florida a couple weeks ago, my dad picked us up at the airport and when we got to their house my mother made me egg salad......ummm.....

I add mayo, a little mustard, a little chopped celery, a little chopped onions, salt and pepper.

No recipe, but here's what I use:

hard boiled eggs, mashed up
Miracle Whip (not mayonaise)
a little sweet pickle relish

That's all. I LOVE EGG SALAD! yum yum.

I never use mustard in egg salad. Just mayo salt & pepper

Deviled eggs: dry mustard ,mayo ,salt & pepper. I make 3 kinds of deviled eggs for a party. I add Bacon to some, tabasco sauce & top with slice of hot pepper & plain. Paprika on top

A tip I got from a fabulous caterer in NYC, the true secret ingredient to a great egg salad is Hellman's Mayonnaise, nothing else comes even close.

Agree on the Hellman's Mayonnaise! It could make a gym sock taste good! :teeth:

My DH LOVES

Tuna and Egg Salad

1 can tuna mix with mayo

6 eggs hard boiled crush and mix with mayo

Then mix the two together on toasted bread...

He had that last night, he really loves it. I have to have one or the other, I don't really like things mixed.

hard boiled eggs, hellmans mayo, little bit of grey poupon, salt and pepper and paprika.Sometimes we add celery and sweet onion too. I dont really measure anything. I just add and taste until it is done.....hmm....maybe that is how I put on weight.....

I have to agree on the Hellmans mayo, I also add about 1 teas. of olive juice (then I don't use as much salt) a few sliced up olives and a little chopped up onion and then add the mayo and some pepper. Then I put it on a Kaiser roll, with a few strips of bacon and lettuce and tomato!!
