Educational activities for kids at Disney

I hope someone can help me. I am looking for some educational activities to do with my 5 and 6 year olds while at Disney this winter. They can both read and write.

We have a world map and are making "passports" for our Epcot trip. I have the journals from The Mouse for Less.

Any other ideas? I would love to have some more activities to show their teachers before we leave. Thanks so much!
