Wed Chicken , not sure what but something with chicken, maybe chicken broccoli casserole
Thursday Venison stew, we have in freezer already
Friday , camping , will pick up poboys on the way , don't want to worry about cooking as we have to get camp set up.
Saturday, BBQ chicken
Sunday something out of freezer
 
I have not gone shopping yet so all I have is tonites meal- Meatloaf muffins, and baked potatoes.
 
How does everyone prepare the chicken for recipes that call for cooked chicken chunks? I'd love to be able to make some ahead and freeze so that it's ready to go into recipes.

You can boil the chicken breasts for about 25 minutes for boneless breasts from frozen and then chunk them and freeze or just microwave a piece of boneless chicken breast as you need it in wax paper and then chunk it.

Boil or just grill them. I mark on the bag what "flavor" they are - for example, spicy, oriental, plain, italian ect.

DUMP LEMON AND GARLIC CHICKEN
2 Cloves Chopped Garlic
4 Tablespoons Olive Oil
2 Tablespoons Chopped Parsley
3 Tablespoons Lemon Juice
1/8 Teaspoon Pepper

DUMP LEMON MARINADE CHICKEN
2/3 cup Lemon Juice
1/4 cup Cider Vinegar
1/4 cup Vegetable Oil
2 Tablespoons Minced Onion

DUMP PEPPER LIME CHICKEN
1/2 Teaspoon Lime Peel
2 Cloves Minced Garlic
1/4 cup Lime Juice
1 Teaspoon Pepper
1 Tablespoon Vegetable Oil
1 Teaspoon Basil
1/4 Teaspoon Salt


Creole

1 Tablespoon Olive Oil
1/4 cup Chopped Onion
1/4 cup Bell Pepper
1 Clove Minced Garlic
14 oz can Whole Tomatoes
(Chopped and undrained)
2 Teaspoons Worcestershire
2 Teaspoons Red Wine Vinegar
1/2 Teaspoon Dried Basil
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
1/4 Teaspoon Pepper Sauce (Optional)

For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a
large baking dish, turn chicken to coat. Bake until chicken juices run
clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken
breasts).

For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat
in freezer.

To thaw and cook: Take the bag out of the freezer the night before, make
sure the baggie is completely closed. Place the Bag on a shelf furthest
from the freezer (It works best if the bag is laying flat, although this
may not be the best option with a side-by-side fridge/freezer). Preheat the
oven to 350 F. Empty the contents of the bag into a large baking dish and
bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30
minutes for chicken breasts).

Garlic Dijon Chicken

2 Cloves Minced Garlic
4 Tablespoons Dijon Mustard
2 Tablespoons Lime Juice

For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a
large baking dish, turn chicken to coat. Bake until chicken juices run
clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken
breasts).

This is a crazy, crazy week but I am determined to not eat out!

Tonight I made homemade chicken and dumplings.
Tuesday- Mushroom pizza and salad
Wednesday- Tuna melts, carrots, celery, chips
Thursday- Salmon, rice, cheesy broccoli
Friday-Grilled hot dogs/hamburgers, pasta salad and baked beans
 
Changed it up and had waffles with sausage and fruit tonight. The chicken did not thaw out in time so we will be having it tomorrow night instead.

I usually plan to use the leftovers from a rotisserie chicken. It's quick and easy and pre-cooked.
 
Sorry a little behind on all my threads! I too try to plan the month out and then adjust week by week. I am now trying to do one big shopping day a month, then 1 short trip a week for perishables... We started a Disney movie and dinner night in anticipation of our upcoming trip which has really helped the not eating out bit on the weekend, as my children would rather do this than go out!

This weeks menu:
(bet you can't tell that we have a lot of weeknight events this week...hence lots of fast meals)

Monday-burrito casserole
Tuesday-pork chops, mashed potatoes, peas/carrots, fresher baked rolls
Wednesday-chili dogs
Thursday-tunafish sandwiches
Friday-Princess & Frog night...shrimp po boys & Beinguets
 
Tonight we had tacos with Spanish rice. I was busy working hard on a mother's day gift for my mom and all I had to do was heat up some frozen beef I had already cooked and seasoned.
 
Trying to stick to a monthly menu. Here's this week's:
Monday: tacos
Tuesday: Crock Pot Beef Roast
Wednesday: French Toast and Sausage
Thursday: Leftovers
Friday: Uh Oh April 1st need to plan ---- maybe a reverse dinner (ice cream first anyone?)
 
Haven't been doing so great with eating at home. I ate out lunch AND dinner Sunday with my kids, lunch at Subway, though I did use a bogo coupon for 6" subs and I had enough points on my card for another free 6 inch, so I ended up paying $12 total for the 3 of us because they each got a bag of chips and we each got a soda. Dinner we ate at the Olive Garden, I used the $4 coupon off of 2 entrees and my younger daughter didn't eat a meal, but still it came to $30ish with tip!!? Today, I went out to breakfast with my husband, but again it came to $35 with tip?!! (He ordered more than one item:headache:) and tonight the kids and I are getting pizza with my mom. That shouldn't be too much, but all in all, it is such a waste of money!! It'll be about $100 when all is said and done. I hate eating out anymore, and it doesn't even taste as good anymore. I used to love eating out.

Anyway, now that I'm done with that rant, here is meals I've planned for the next week or so:

Rotisserie Chicken, stuffing, mashed potatoes, brussel sprouts
Corn Chowder, red skin potato salad, chicken salad sandwiches
Meatloaf, candied yams, broccoli and cauliflower
spaghetti and meatballs, salad
Hamburgers with lettuce, tomato, onions, pickles and french fries
pork roast, apple sauce, green beans, roasted potatoes

And I only need to buy a few ingredients to make the meals because I have most of the ingredients already.

It was amazing. Even my picky (really really picky) daughter ate it and liked it. It was restaurant quality and so so good. I made homemade coleslaw and homemade corn bread with it. I was craving it again the next day.:love:

Today we were doing errands and DD's blood sugar started dropping so I thought we'd just stop at Panda Express for a quick snack to share. Unfortunatley all the stuff we could eat (shrimp) had upcharges so our small snack was $14:confused3. But we are eating dinner at home. Last night was Veggie Stew and hot rolls. Tonight was egg mcmuffins w/tomato slices for those of us who don't eat sausage and applesauce for everyone. Other meals in no particular order.
Hot dogs or tomato and hummus sandwiches, baked fries and corn (have enough to do this twice)
Potato breaded cod or pork chops, zucchini and broccoli (have enough to do this twice)
scrambled eggs and biscuits and gravy
Tuna cakes, peas and rolls
Baked potato bar w/chili, cheese sauce, shredded cheese and broccoli
 
Tonight we had ham and cheese sandwiches with carrot sticks and grapes.

I went grocery shopping today and spent $54.53 but saved $31.55 with coupons/card savings. Plus I got a $3 coupon off my next shopping trip.
