Eat at Home 3!

I haven't checked in for a while. Going to try to post more often to stay accountable...

🍳 Breakfast meal prep: smoothies
🥪 Lunch meal prep: turkey and cheese sliders, grapes and boiled eggs for snacks.

Sunday- Birria tacos
Monday - leftovers
Tuesday - Mediterranean Pasta (from Ald) with garlic knots
Wednesday - Frozen burritos
Thursday - Shrimp Scampi & garlic noodles
Friday - Parmesan ranch pork loin chops & veggies
Saturday- Frozen pizza & salad
 
Thanks for bumping this post! I've really been working on eating at home a lot bc I am desperately trying to clear out my freezer(s) as much as possible this summer so I can meal prep/freeze for back to school. This school year is going to be busy so this would just help, but I need space!!

This week I made:
- sticky chicken bites, rice, cucumber salad
- grilled steaks, roasted potatoes, salad
- French bread pizzas and salad
- Chicken cacciatore

Next week, my goal is to continue working down my freezer, so I'm thinking the following:

- hot dogs, baked beans, salad
- Shrimp, garlic rice, green beans
- grilled sweet and spicy chicken, roasted potatoes and veggies
- tortellini, garlic bread, salad

Those are my definites but I have plenty more to supplement the other nights.
 
I may be starting weight loss meds in the next few months (waiting until after my trip in sept/oct), so I have been doing a lot of research and trying to change my diet NOW so it won't be so hard later. I am working with a medical team (psych, NP who specializes in them, and my PCP) so that I can make them work. But that means eating at home a lot more then I have been over the last couple of years.

The diets focus is on increasing protein, fiber, and hydration while decreasing added sugars and unhealthy fats. Right now my personal focus is on the protein and hydration. I am trying out a couple protein bars and shakes to see if I can stand them. These would be for days I am not doing well or feeling well.

This week we have:

Breakfast: Scrambled eggs and avocado toast or a frozen breakfast sandwich/burrito
Lunch: Frozen meals with added vegetables
Snacks: Fruit, beef sticks, cheese
Dinners:
Tonight/tomorrow: Garlicky Shrimp Couscous bowls with chili roasted broccoli
Wednesday: Steak with mushroom cream sauce, roasted potatoes and carrots
Thursday/Friday: Ginger chicken lo mein

Totally in the same boat! Two teachers here, with a busy college Junior who lives at home - so organizing meal prep and batch/freezer cooking are a huge part of my August so we don't go completely crazy come back to school in September! Clearing out the freezer is definitely a big part of that so we have space! We have a large stockpile of meat thanks to our June Costco stock up trip, so I am trying to focus on using up what we have with our weekly menus. This week:

Sunday: Philly Cheesesteaks, Onion rings
Monday: Buffalo Chicken Meatballs, Macaroni Salad and fries
Tuesday: Cajun Chicken Pasta with salad
Wednesday: Sausage sandwiches and salt potatoes
Thursday: Honey Garlic Chicken Rice Bowls
Friday: Pizza(homemade, possibly takeout)
