Eat at Home 3!

My brother decided to show up unannounced for a visit from out of state and threw a curve in my plans. We ended up going out for dinner and a lunch this weekend that I was not budgeting for. :mad:

Sunday - Garlic Parm chicken wings & mac/cheese
Monday - leftovers
Tuesday - Bean & Cheese Enchiladas with Mexican rice
Wednesday - Fried sausage with rice, peppers & onions
Thursday - Grilling (brats & burgers)
Friday - leftovers
Saturday- Beach Picnic- sandwiches, fruit and chips
 
Tonight was grilled honey lime chicken and egg noodles
Tomorrow is take out brewery pizza (gift card) for DH and london broil w/ fries for me (l/o will be lunches or another dinner)
Thursday- sliders and hot dogs on the grill- not sure of the sides
Friday- work finally decided today to close so I think we will just do leftover buffet (grazing kind of day)
Saturday- at the shore

Sunday - Creamy Green Chili Chicken on Ciabatta rolls
Monday - Baked Tortellini with ricotta & meatballs
Tuesday - leftovers
Wednesday - Fried sausage with rice, peppers & onions
Thursday - Lemon Pepper Tilapia & veggies
Friday - Scallop scampi with linguine
Saturday- prob something light like a charcuterie board🤷‍♀️

I’m just starting on this thread to try and save some money. I’m getting an error when I try to virw the other two parts.
 
Sunday was steak, broccoli cheddar rice and green beans
Monday was meatloaf, mashed potatoes and corn
Tuesday was take out pizza
Last night was pork chops, stuffing and peas
Tonight will be sticky chicken thighs, rice and roasted carrots
Tomorrow night taco bar with all the fixin's
Saturday enchiladas, Spanish rice and calabacitas
 
Ok, I need help. Decided to get back on a budget (we were on a budget in May, but we got off of it in June and the first 15 days of this month, so I did one for the final 16 days of July. Needing to start eating at the office. So looking for ideas of frozen meals that are healthy and a decent amount (I usually eat a salad, or a burger and fries or a sandwhich and chips, just to give an idea). So looking for some cheap stuff I can keep in the freezer that I can jusst pull out, pop in the microwave, grab a team at Chickfila or Canes and eat lunch. So what are the healthy, frozen food items out there?

I also have been buying a loaf of bread every 2 weeks or so to keep in the freezer for PB&J sandwhiches a couple of days a week, and I keep a bag of chips and little debbies or cookies (or both) in my desk for desert. So just looking for entree ideas.

I make and freeze black bean burritos that we can just pull out and microwave for a quick lunch. You could easily add meat. I don’t use a recipe but what I make is similar to this. I usually add frozen corn to mine and and I use the Near East Spanish rice instead of white rice for extra flavor.

Hi, I’m new here and would like to post weekly to keep myself accountable. Also really appreciate the inspiration from everyone else’s plans!

The plan for this week is:
Sunday - linguini and clams (white wine / shallot sauce)
Monday - chicken with crispy mushrooms and veg
Tuesday - leftovers
Wednesday - ginger-sesame meatballs with steamed rice and veg
Thursday - tacos
Friday - steamed fish (Cantonese style) with rice and veg
Saturday - dinner out (husband’s birthday)

We’re just a family of 3, so when I make a large batch of something, I’ll freeze portions rather than eat leftovers the next day. I find that most casseroles like baked ziti freeze well (just freeze in individual slices).

I’ve got ziplock bags of chili in my freezer for a quick lunch. I defrost those though the night before I’m going to use them and then heat through in the microwave.

Pulled pork is always great, and if you bring a brioche bun (which you can also keep in the freezer), you can make yourself a nice sandwich at the office.
 
I don't really like the idea of freezing food because it never gets eaten. And I'd rather not cook on Monday to eat on Friday. I tried doing some eggs on Sunday to make a egg mcmuffin type deal, take 1 for breakfast then put the other 4 in the fridge. I ate them the next day and threw out the final 3 because they'd been in the fridge so long. So just not a fan. I'd rather just go to the frozen food section and buy and put 3-4 meals in the freezer at work for a couple of days.

We tried to freeze spaghetti for leftovers but wound up throwing it out after 2 weeks of not eating it. Yea, I keep a loaf of bread in the freezer for a couple of weeks then throw it out and get another. So that's a good idea (I keep peanut butter at my desk and jelly in the fridge to make PB&J sandwhiches). .

Sorry in your previous post you mentioned frozen food that makes an easy lunch, which is why I suggested the burritos. I didn’t realize you were looking for premade frozen food. I can’t help with that, prepared foods aren’t something I buy because overly processed foods are tied to the cancer I had. I make my own convenience foods and freeze them to get around the overly processed food issue.

Oh - sorry, I misunderstood. I like Amy’s brand enchiladas, but I they’re so expensive now I don’t buy them often.

I realize a lot of the prepackaged frozen foods are bad. So that's why I asked which are good for you. I know when you buy frozen veggies, they're good for you. But wasn't sure about other frozen entrees. I'm trying to find some that are healthy and not just full of processed stuff.

If you have a Trader Joe’s nearby, their frozen food selection is pretty good. They also have some healthier choices. I like their vegetable japchae (Korean noodles) or soup dumplings.

They have all kinds of cuisines, too. Italian, Indian, Mexican, etc.

Another suggestion would be frozen cooked chicken breast for sandwiches. Also try to snack on nuts. They are healthier and more filling than little Debbie’s
 
I've got one about 30 minutes from me. My wife works on Saturday morning, so I may fill my cooler up with ice and ride over there and see if I can find anything good. My coworker loves Trader Joe's and talks about how good their fresh fruit is. So I might just ride over there if I can find my cooler to be able to put the food in for the ride home.

I did tuna for lunch yesterday. I forgot how good it was. Also, we buy the canned chicken to use for any recipes we have with chicken or to just drain and put on a salad, baked potato, something like that.
