Eat at Home 3!

We have burger patties left over, so I’m grilling them tonight. Fries on the side.

Sunday: Greek chicken pitas
Monday: pasta with fresh tomato and arugula
Tuesday: steak tips, new potatoes, green beans
Wednesday: breakfast for dinner

I’m making hummus, marinating feta and making an Italian pasta salad for lunches.

I haven’t planned beyond Wednesday because life is crazy again and I’m going to the store on Wednesday while DD is at dance.

The wheels are falling off the bus people. I have no plan for the week. It's 7pm. We haven't eaten any sort of dinner (just me and DH....not to worry no children were harmed in the lack of making a menu). And as I mentioned in a different post we are away every weekend in June so absolutely need to eat at home during the week this month. I'm going to need a miracle to get it together. At least I thoroughly cleaned my house this past weekend so I'm not failing on all fronts.

I feel you. I have had lots of issues recently with planning.

We’re on the road again and eating out, but next week will be a full week home (almost). DD is getting braces and will be on soft foods for a few days. I’m thinking lots of smoothies, mashed potatoes, maybe soup if it’s not too hot. Any other ideas from those who have been there done that?

Overcooked spaghetti or ramen works for my daughter.

If she will eat it…refried beans with some cheese and sour cream, cottage cheese, yogurts, applesauce, oatmeal, soft scrambled eggs, pancakes.

A gazpacho in the heat of summer is really yummy. There are a few easy quick recipes that use canned tomatoes.

Had to swing by Publix so I grabbed some BOGO stuff for dinners this week (Gortons fish fillets, pasta sauces, ricotta cheese, ham steaks).

Sunday - Mississippi Chicken, Rice & corn
Monday - Breakfast for dinner eggs, sausage & pancakes
Tuesday - Tuna casserole
Wednesday - Fried sausage with rice, peppers & onions
Thursday - Garlic Parm Fish fillets & roasted potatoes
Friday - Ham steaks with mac & cheese
Saturday- Baked tortellini with ricotta

Nothing remotely gourmet, but we aren't eating out at least and DH and I aren't starving. Leftover teriyaki taco for me. Another homemade breakfast sandwich for DH. We don't eat breakfast during the week (DH might eat something sweet as a late morning snack) so breakfast for dinner is fine two nights in a row. Going to have to get it together this weekend, but the next two nights will continue to be fly by the seat of our pants just eating out of the pantry and the freezer with whatever we can we are happy with putting together for dinner. Trust me, I won't be providing anyone menu inspiration for a few days :rotfl2:

Sometimes it’s a successful day if everyone is fed.
