Easter Dinner low calorie ideas Please!

Can you share some of your low calorie ideas for Easter Dinner?

I am looking for a yummy dip to serve with fresh vegetable. I do not want to ruin everyone else's dinner with my diet,but if I can find good substitutes it is win win

Any and all ideas & recipes wanted for anything Easter Dinner related.

I don't have one for a dip but I was thinking about mashed potatoes.

I usually use the red skinned potatoes or yukon gold. They seem to be more flavorful. And I leave the skins on the red skinned. Then you can mash them with low fat chicken broth instead of milk or cream. Or if you like sour cream in your potatoes. Use the fat free. I don't notice any difference. Especially if its' used in the potatoes. And then I dont add any butter. If others want it, it's on the table. But then I don't have to have it. Oh yeah, I salt the water pretty good when they are cooking.

I make a dip using either fat free sour cream and mustard. Koop's has a variety of mustard called Arizona Heat. I mix those then add some fresh cilantro. It is yummy with pretzels.

I do a similar thing with low fat cream cheese. I make turkey roll ups with it. If you want to dress it up a bit, you can put the turkey roll ups on a platter and sprinkle with chopped green onions, paprika and the like.

Try cutting the fat in the after Easter egg salad and deviled eggs by throwing out half of the yolks and using fat free plain yogurt in place of mayo.

How about making a small turkey or chicken? That way you can have something yummy and low cal with veggies on the side.

DH is going to make surgar free pudding pie with skim milk & Cool Whip free, sprinkled with Hershey Coco powder.
