I was just wondering can we participate in emh on the morning of checkout, can we checkout first then go to the parks for emh or does everything have to be done before checkout?

You will have all the resort perks until 12:00am (midnight) on the day you check-out. So yes you may check-out then enjoy EMH that morning.
