I apologize if this has been asked a thousand times already (I looked but couldnt find my answer):
How does it work exactly as far as allowances per night? Im thinking that I wouldnt be able to use more than 3 credits of each particular service per night. But could I do signature for dinner, table for lunch, and counter for breakfast? Im very confused...

You get 3 credits times the number of nights you stay. So, if you stay 5 nights, you get 15 credits.

You can use them however, whenever you want from the day you check in until midnight of the night you check out. That means you could use all 15 on one day (if that were humanly possible). Once you've used all 15 credits, you don't get anymore. Most people on the DxDDP use 1 credit for breakfast or an early lunch, and then do a signature meal (using 2 credits), but you don't have to do it that way.

Not sure what you mean by "particular service."
But as Sharon explained, you get 3 total credits per night. You don't need to use exactly 3 credits per day -- the credits are pooled for the entire trip. So you could use 2 credits one day, use 4 credits another day.
A signature is 2 credits. So on average, for example, you could do a signature dinner, and a TS lunch. Very easy to assemble breakfast with snack credits (cereal is a snack credit, a bagel is a snack credit).

To follow on, if "by service" you mean for example the dinner service on a particular day, no you are not limited as you suggest. In theory, you could book 2 signature dinners for the same night (say, 4 PM and 10 PM, assuming operating hours permit) and use DxDP credits for both (4 credits per person in total). The credits are yours to use at any time from check-in until the midnight that follows check-out.
