I second the school bread. Not an exciting name but it is so yummy.
 
1. Frozen
2. Soarin'
3. Spaceship Earth
4. Living with the Land
5. Garden Grill and Coral Reef are both must does IMHO at some point. You don't have to do them every trip, but they are both worth visiting at least once.
 
My husband and I haven't ridden the Frozen ride because we used our FP on other rides. We tried to ride it this year, but we weren't willing to wait the 90 minutes to ride it. The line was out into the hot sun and it wasn't worth it to us. I'm not a huge Frozen fan at all so we will ride it eventually.

Try the first couple hours the park is open. The lines are typically shorter.
 

Soarin', Living with the Land & Spaceship Earth are the most Epcot ride there are.

Depending on which direction you go, but this is my usual, with some alcohol splashed in: Margarita in Mexico, Norway has an amazing viking coffee, Eggrolls in China, Brown elephant at the Cool Post, Paprika chips in Germany, wine flight in Italy, America doesn't have anything exciting, cloudy sake in Japan, falafel in Morocco, ice cream in France is always a must do stop, Fish & chips in UK, Popcorn in Canada & cronut at the Refreshment port.
 
We usually ride Spaceship Earth, Soarin' and Test Track. We like to go into the exit area at the Living Seas and then we're done with Future World. It's fun to snack around the World Showcase and maybe ride the ride in Mexico and shop in Japan but then we're done.

We were there in the afternoon because we went to HS first. Otherwise, we definitely would've tried to either get a FP for it or be there in the morning.
 
My must do's are Canada, The United States show, Frozen, Mission Mars, Figment, Soarin, Living with the Land and Mission earth. I enjoy test track, but I think it goes down way too much, I even enjoy the Fiesta ride. I would have to say with F&W going on I found the Greek Nachos to be really good value, if you do get them let them settle a bit because the pita chips soak up the juice and become really flavorful.
I love Canada. Walked right by it for years. Went through it a couple years ago, and had no idea what I had been missing. It's absolutely beautiful.
