Does World of Color run every night?

Hello.

We will be attending Disneyland Dec 3-7 (Sun-Thursday). It is my understanding that this is one of the "slow" weeks of the year. Will World of Color run every night during this week, or will it only be running during the weekends?

Historically runs every night unless it is down for refurb.

Peak season may be as many as three shows, off season usually only one show a night.

WOC has a refurb generally in mid to late January for a few weeks.
DLR tries to have at least one "Nighttime Spectacular" every evening, and WOC is often the only show.

As others have said, WoC is typically presented nightly unless it's down for a refurbishment. As mentioned, that usually happens after the holiday season has ended. WoC is the least weather dependent show, so it is usually presented without any issues (unlike fireworks).

I don't know if there are really any "slow" times during the Holiday Season. I don't think the parks will be jammed pack (especially on the weekdays), but I wouldn't go expecting no crowds either. Note that Main Street will be pretty busy on Sunday, Dec 3 in the evening because that's when the Candlelight Processional is most likely to be occurring (it's not something DL publicizes, but the dates were confirmed in this thread). It just makes navigating MS a bit more difficult than normal.
