It does not get green, it gets White! I have seen it .
The best thing to do is microwave it for several minutes. This will either kill the germs or cause them to evolve to the point that they will hit you when you go to "Cut the Cheese".

If you have a block of velvetta and don't know what to do with it, look up Paula Deen's fudge receipe.

From memory:
Melt equal amounts of velveta, butter and peanut butter and some vanilla, sift in enough powdered sugar cover and cool. Double check the amounts... I think I left something out.
