Not too many ADRS at all.
In fact, we often have 3 ADRs per day.
We have 3 meals/day. So, it's either a CS meal or TS meal. Depends on what you order, a TS meal isn't necessarily more food than a CS meal. And, you don't have to eat everything!
As for timing: we know about when we'll want to eat, anyway, so we don't have to rush for an ADR. CS meals, for us, take 1-1.25 hours. TS takes about 1.5 hours, on average. So, they don't take much more time, and they are a lot more relaxing and rejuvenating.
Definately look into whether you can add the dining plan. It'll save some money.
As for breakfasts:
Instead of Kona, You can try Ohana at Poly, or 1900 Park faire at GF.
On day 4: you can do Akershus royal banquet hall at Epcot. You can make ADRS for as early as 8:00, so you're ready to go when the park opens.
Also, for Day 6 (the other Epcot day), you can have breakfast a Cape Mae, and then walk to the International Gateway at Epcot.
On Day 5: for dinner you can go to Crystal Palace.
You didn't say how old your kids are, but they may enjoy the character meals. (I think you only have 2 planned). Many of the places I mentioned are character meals. There are others as well.
