Does This Recipe Sound Good...?

I'm toying with a new recipe I just thought up...

I had been marinating chicken breasts in salsa for a different recipe, but I thought of switching it up.

Here it is...

Baked chicken breast topped with chili (Hormel or the like), Monterey Jack cheese, and salsa, all baked until warm and melty.

Served with seasoned (taco seasoning) rice.

Gross...? Good...?

Gross. I can't get past the Hormel Chili.

I think Hormel chili is akin to Alpo. If I were to make your recipe, I would probably use homemade chili. But chili and cheese on top of chicken sounds really heavy and not so good.

I think it would be better without the chili, Hormel or otherwise. I just don't think chili is a good topping for chicken.

My DH likes it :( I try to make it in recipes, like the dips and such. It does sort if sound gross, but I am out of ideas for what to do with his damn chili! ;)

I guess it'd be okay with vegetarian chili? Every time I've had canned chili it has "meat" in it, so my first thought was "gross."

However, if you'd said chicken with tomatoes, beans, onions, peppers, chili powder etc. I would have said it sounds great! (Except for the beans it doesn't sound too far from a cinnamon chicken recipe I have.)

I have several recipes for chicken with tomatoes. In fact, we had chicken with balsamic vinegar and tomatoes last night.

My family likes canned chili, but I only serve it as a "quick and easy" meal - usually over hot dogs or a baked potato.

Well how often does he want you to cook with it? Can't you just occasionally do the standard chili dinner or chili dogs with it and leave it out of the rest of your meals?

Now I picture poor Megs with thousands of cans of Hormel in the pantry trying to to make chili topped salmon and Hormel chili quiche.:lmao:

THAT sounds good. I might do it with black beans (original recipe) instead.

Looks like DH gets Velveeta dip again! ;)

I make it once a month, about. I'm chili dogged out LOL. I really wanted chicken tonight, and when he left for work, he mentioned chili. I was trying to please us both!

LOL! I usually don't try and get creative with the crap, but I thought I would try!

With that recipe I'm assuming the morning sickness is gone? :rotfl:

My vote is yuck. Why don't you heat up the chili with a little shredded cheese, add a dollop of sour cream, some diced fresh tomatoes and serve it on the side with some Tostitos? Just have the marinated chicken with cheese as the main dish. :thumbsup2

My first thought would be throw it away. :rotfl:

You can make chili in the crock pot and then freeze it ( I would assume it freezes well enough, I'm also not a chili fan ) and it would probably be a little better for you both.

Also, your recipie sounds good without the chili.

I dated a guy who loved the stuff also, so I would make up spaghetti or noodles, put the chili on top, hot sauce, then provolone cheese and melt.

Kind of like Cincinnati chili.

You could use the other have of the noodles season like you want and add a baked chicken breast.

I like this. Or, make a casserole by mixing the chili with cooked spaghetti. Top with shredded cheddar cheese and bake.

I was also going to say if chili dogs are getting old and well as just bowls of chili, make Cincinnati chili (no beans) or 3, 4, or 5 way chili (with beans).

Top spaghetti noodles with the chili, give it a hit of hot sauce or tabascco if he likes heat (you can leave yours alone until you know how your stomach will react), and top with shredded cheddar or cheddar/jack cheese. If you like onions, you can sprinkle some chopped white onion on top of it.

We have one friend that adds sliced jalapeno pepper slices to his chili plate- he likes hot food. They always have a pot of both bean and no bean chili going. Most of them add a scoop of no bean just to get extra meat and sauce to their plates.
