does spirit of aloha really take 2 hours

We have reservations at spirit of aloha at 5:15 and need to be at the Poly marina for the fireworks cruise at 7:00pm and the cast member told me we wouldn't have enough time. Is this true?

Yes, it's likely true, considering it takes time for both the dinner and the show. I wouldn't book a dinner show if you have to be somewhere else within 2 hours. Switch it to Ohana or Kona if you want to eat at the Polynesian.
