Does anyone have good brunch recipes?

I'm hosting two brunches over the next month or so, and I'm looking to make some muffins the day before (have recipes for those) and then some sort of an egg casserole that morning. Trying to keep it to one pan and easy.

Any other ideas of quick and easy things to serve? I want to spend time with my guests, not in the kitchen!

If you PM me with your email address, I have 2 GREAT one pan casserolles. One is for an egg bake (Eggs, bread, cheese, milk) and the other is for a French Toast Bake (similar ingredients). These are my 2 standbys, and they are YUMMY.

You know, there have been a few great breakfast casseroles featured on the Food Network. Go to www.foodnetwork.com and you can search using keywords such as egg, casserole or breakfast casserole. I work for the Food Network, so if you are looking for something specific, I would be happy to do some deep searching for you. I know of a couple of shows that have featured casseroles, but not sure what all you would want in the casserole. PM me if you have any questions.
 
Southern Living did a spread on brunch recently. I'll have to look at home, but they had a brunch casserole, muffins (bake ahead and reheat) and maple coffee. These might be on their web site?
 

I'm having brunch for 50 on Saturday. It's our high school's homecoming parade and it goes past our house. I have one kid in the band, and one who graduated so everyone kind of gravitates toward our house to watch the parade.

I am making three casseroles. One is a french toast bake made with raisin bread, sausage and maple syrup. I'm making two egg bakes--one with hashbrowns as a crust--one that's just egg, cheese, ham, scallions, and red pepper.

Let me know if you're interested in any of the recipes--I don't have them here with me at work--but could post tonight.
 
Sausage balls are yummy and easy to make. The recipe is on the side of the BisQuick box, which is one of the ingredients..
 
Oh man, quiche is always easy and is sooooooo good!

You can make several different kinds, ham and cheese, vegie, plain cheese....and you can make them in the regular large pie crusts or go with something fun like the little tartlet size shells.

They're so easy because you can make them ahead of time and just re-heat before serving. With a nice assortment of breakfast breads and a few fresh fruits your brunch could be easy AND tasty to boot.
