I've misplaced a taco soup recipe I got from a grocery store flyer about 10 years ago. It was meatless and had a can (maybe two cans) of refried beans in it. I remember it had corn, Rotel tomatoes, taco seasoning and ranch dressing mix. It might have had chopped chilis and it must have had other tomatoes or a can of soup in it. I also can't decide whether it had an onion or just got onion taste from the seasoning.

The refried beans thickened the soup and made it seem like it had meat in it. My DH acutally ate it a couple times before he found out there was no meat! Last time I got a recipe that had meat in it on-line, and it was good but not as good.

Anyone have this one?

Could this be the one? It's all fat free because I"m on Weight Watchers. Hope this helps you.

1 pkg Taco Bell Taco Seasoning Mix
1 diced onion
2 cups frozen corn kernals
1 can fat free chicken broth
1 can white beans
1 can black beans
1 can fat free refried beans
1 can diced tomatoes
1 can Rotel

Saute onion in Pam. Do not drain any of the cans. Add everything to the pot. Simmer until heated through.

I forgot to type in 1 pkg of Ranch dressing mix. Sorry!

That's not it, but it sounds good -- thanks. I know it doesn't have chicken broth and I don't think it has the beans -- might be wrong about that. The thing I'm most unclear about is what kind of tomatoes other than Rotel -- somehow I think it MIGHT be a can of tomato soup.

How about this one?

1 large onion, diced
14 1/2 oz canned diced tomatoes
14 1/2 oz Chi-Chi's Diced Tomatoes & Green Chilies
11 oz canned corn with red and green peppers
15 1/2 oz low-fat or fat-free canned refried black beans
2 cans water (~3.5 cups)
1 package taco seasoning mix
1 package ranch salad dressing mix (dry)

Saute onion with vegetable oil cooking spray. When softened, combine all other ingredients and cook until heated through.

Makes 9-10 cups. Serving size is 1 cup.

buzzlady's recipe is either it or a lot like it. I think I'll make it that way -- might add a can of black beans like LBAK's recipe. Should be good even if it's not the exact thing I've made before.
Thanks folks!
