do your check in day and check out day count as a full day

In terms of the credits you get on the dining plan do they count your check in day and your check out day as full days?

When FD is applied . . . are your check in days and check out days full days? I ask because on our check out day we would leave early in the morning as we are driving. So if we had credits that were intended to be used that day we would spread them out to other days.

In terms of dining, it is based on the number of NIGHTS.

Days are not relevant. Credits are based on the number of nights and can be used as you want during your stay.

Based on nights, as the others have said, and start at check-in and continue until midnight of the day you check out.

I'm checking in on Thurs, Sept 27. I'm checking out on Thurs, Oct 4. How many TS do I get? I thought it was 8 (counted check-in and check-out days), but is it only 7?

Based on the dates you have said, your vacation is 8 days/7nights. Credits are per night, so if you are on the regular DDP, you will have 7 TS credits.

We drive so on our check out day we usually hit the road by 9 am at the latest (12 hour drive) I asked about the number of credits because we would not use them on check out day, well maybe a breakfast before we go, but this means that I have a couple extra credits to use. SO Im considering booking a 2 credit meal such as CRT.

We have the same thing. I usually do a very early breakfast on one day (say, Crystal Palace before park opening), and then do a TS dinner that same day.
I haven't wanted to give up a TS credit to do a 2 credit, but that's a great idea too.

Just be sure the number of credits you are using equals the number of nights you are staying, and you'll be sure to use all your credits.
