Do you have an opinion on these counter service restaurants?

These are my opinions on the CS places from your list at which we have eaten:

Earl of Sandwich - we were not impressed. Sandwiches small with little meat. We got 2 meals and were sharing with DS2 and none of us had enough to eat (unlike our experiences at all other CS places). Disappointing as DISers typically rave about this place, but after our experience we really couldn't understand what all the hype was about!

Columbia Harbor House - another place we really didn't like. DH had the fish and chicken combo and said the fish was awful, really chewy and tough. Chicken not much better. I had the chicken salad which was good, but strangely the chicken was all on the bottom so you had to dig through the salad with each bite to get a bit of chicken.

Flatbread Grill - very good, the only CS place we eat at in MGM.

Tangerine Cafe & Yorkshire - I am sticking these together because we tend to get one thing at a few spots in WS and share for one of our lunches. Both were great. We had one of the gyro wraps at Tangerine and it was delicious. We also had the fish and chips at Yorkshire and liked that as well.

Cosmic Rays - Liked it, good fixins bar, but was really crowded when we ate there (had to search around for a table, but ended up finding one on the outdoor patio with a great view of the castle)

Have a great trip - I went to WDW with my mom just after I graduated from college and it was a lot of fun!

Artist's Palette - Lunch (2/05)
Flatbread Grill is OK, nothing great--but it is MGM and really the CS food there is not so great. Herbies is a trailer, not a real CS--no chairs or tables or anything.
Epcot everything you have there is fine.
MK those should all be ok, but watch with the Noodle Station it is rarely open, so have a back up plan
DTD Puck's is great,Earl's is good as well and I have never tried Bongo's so I can't help there.
Saratoga I have never been so I can't answer.
 
BTW Bongo's Cuban Cafe is table service rather than counter service. Never eaten there.
 
Wolfgang Puck Express is the best CS at WDW. The menu is awesome, the portions are huge and if you're on the DDP the value is unmatched. Don't miss the creme brule either.
 

We were at WDW 2 weeks ago and I ate at a few of the places you asked about.

Magic Kingdom

Pinnochio Village Haus - We thought the food was excellent. My DH had pizza and My son and I had the chicken strips meal. We were on the DDP and we were able to get milkshakes for our dessert. They were really yummy.

Cosmic Rays - Both my DH and I had the ribs and we thought it was horrible. Maybe it was because the park was closing in an hour and the food wasn't fresh. The ribs were fatty and over-cooked.

Epcot

Seasons - We at there for breakfast. We each had to croissant sandwich and it was pretty good.

Kringla Bakery - We had the dessert Pretzel and horn dessert and they were great.
 
Thanks for posting these reviews/opinions. My husband & I leave in a little under 3 weeks for DWD & we too have decided to wing it. Mostly because we don't know where we will be at what times. I've been trying to come up with a few options at each park though so we have at least some idea. This thread has been very helpful.

Sunshine Seasons - Good variety, something for everyone and pretty good, especially the desserts!!!
Tangierine Cafe - Good...
Kringla Bakery Cafe - Only had yummy things here...love the rice pudding!!!

Magic Kingdom

Pinocchio Village Haus - OK, nothing special from what we've had there...
Columbia Harbour House - Very good for cs - the tuna sandwich and the salad are both very good!!!

DTD

Wolfgang Puck Express - Well, this is my very favorite cs at all of DW. The food is fresh, hot and full of flavor!!!
Bongos Cuban Cafe - was not impressed the 1 time we ate there. My beef was very tough...
Earl of Sandwich - Another good choice. We've only had good sandwiches here!!!

OK, those are the restaurants I have ate at. I love each of these restaurants, FYI. Here are my opinions:
Sunshine Season: Only ate here once since they remodeled and loved it (I loved it more before though). They have all sorts of different choices, so everyone can be happy. We had the turkey sandwich on foccia (sp?). It was faboulous. YUMMMM! The key lime pie thing is to die for.
Tangierine Cafe: Also only ate here once. I never had that type of food before, but my sister wanted to eat there. It was really good. The atmosphere is amazing. I'm not sure the restaurant is for everyone, but we really, really liked it.
Columbia Harbour House: This is a family favorite. We've gone to this restaurant for as long as I can ever remember going to Disney World. There is a second floor which is usually always open, offers great views of the pathways, and quiet. Cute theming too.
Wolfgang Puck Express: I cannot stress enough how this is my favorite restaurant ever anywhere. Everytime I've been around one, its always extremely busy though. But the food is amazing. I suggest the roasted chicken or whatever it is. You will fall in love. I promise.
