We love corned beef here!
If you're not a big fan of it because of it's texture, try this.....
After boiling it until almost fork tender, remove it from the water and put it in a roasting pan. Spread butter on it and then sprinkle brown sugar on it. (I usually give it a good coating). Then put it in a 350 degree oven for about 20-30 minutes. The brown sugar melts and makes a yummy coating and by putting it in the oven it firms the meat up so it isn't so "jelly" like.
Also, make sure to use a flat cut and not a point cut.
Give it a try....you'll absolutly love it!!!

My mom used to make corned beef and cabbage when I was growing up and just hearing the name brings back the memory of that awful SMELL.
