Do the restaurants use regular menus for NYE day?

We will be at Disney the week between Christmas and New Year's. ( I know we're crazy) . I am hoping to make a PS for Le Cellier for lunch on New Year's Eve. Will they have a regular menu that day? How difficult is it to get PS during that week?
