I've never been to Universal, but I hear that Universal's Island of Adventure is pretty awesome and much better than the main park. I'm getting married at WDW in December and we have to take a day to go get our marriage license. We were going to use that day to go to Islands of Adventure. But with the addition of Harry Potter World, will we need a two day ticket? Or should I save my extra Disney day for a total of 11 days?

When in December? Early December, one day is probably enough. Mid- to late-December, a second day may not be a bad idea. Crowds will increase massively starting about a week before Christmas.

I went to IoA yesterday and their hours were 9am-6pm. I got into the park about 10am. Ate at Mythos from 2pm-3pm. By around 3pm, I had the following rides under my belt

2x Spiderman (25 minute wait, one as single rider)
1x Harry Potter (60 minute posted wait)
2x Ripsaw Falls (5 minute wait both times)
1x Bilge Rat Barges (10 minute wait)
1x Jurassic Park (5 minute wait)
1x Hulk (single rider)
2x One of each Dragon (5-10 minute wait on both)

One weekday is easily enough for IoA. And it's totally effortless when using single rider. Time shouldn't be an issue at all unless you really have to wait for show times or something.
