Disneyworld + Cruise + Driving doable in 14 days?

Alright we were about to purchase a vacation package to Jamaica for the family and realised they'd have much more fun in Disney. So being the amazing/selfless parents we are :goodvibes it's going to be disney. Hubby and I still want this trip to be for the entire family, meaning we want to do a mixture of both the parks and something for us.

Now I've been trying to arrange it but feeling a bit overwhelmed and would appreciate some input.

- Kids are almost 3,4, and 12 and have a alot of energy so we'll be able to do a park a day no problem.
-Going for approx 2 weeks but can extend/decrease the length since we're going with our own car and have more freedom and hubby has no issue with work.
-Driving from toronto and have pretty much entire month of May available as the start of our trip date.
-Will break the driving to 2 days with a stop at a hotel.
-Our boys actual bdays are on May 12 and May 16 and we want to celebrate it in one of the parks.
-Hoping to not do a park everyday back to back to keep them interested/excited.
-Will LOVE to take a cruise 3-4 nights at max to Mexico or bahamas as we've never been and it would be a nice break from Disney for mommy/daddy (would prefer mexico over Bahamas) Since we're a family of 5 it seems impossible to be able to book through a online place? Any kids sail free promos?
-Will like to visit Daytona for a day
-Upon leaving Orlando would like to hit up some USA states/cities that are interesting for the whole family, aiming at 2 hotel stays since it'll be only hubby driving and he'll need the extra time off/rest.
