Just wondering if anyone has any recipes from Disneyland?

I am craving chicken tacos but any other recipes will do!!
 
Here is the recipe for the Monte Cristo





This is the famous Monte Cristo sandwich recipe from the Blue Bayou restaurant in New Orleans Square at Disneyland.

Monte Cristo Sandwich

Monte Cristo Sandwich is served with currant jelly sauce. First prepare this, then make the batter. While it is chilling, put together the sandwiches. When the sandwiches are fried, the complete service is ready.

Currant Jelly Sauce
2/3 c. currant jelly
1 TB water
1 TB half and half
Combine jelly, water and half and half in blender and mix until smooth. Makes about 3/4 cup.

Batter
2/3 c. water
1 small egg
1/2 t. salt
1/8 t. white pepper
2/3 c. all-purpose flour
1 3/4 t. baking powder
Place water, egg, salt, pepper and food coloring in a bowl and using an electric mixer, mix well at low speed. Add flour and baking powder and mix until batter is smooth. Chill. Makes enough for 4 sandwiches.

Sandwiches
8 slices white bread
4 slices turkey (1 oz. each)
4 slices swiss cheese
4 slices Pullman ham
Make 4 sandwiches, putting cheese between hand and turkey. Cut into fourths and put a toothpick through each quarter.
Final Preparation:
soybean or vegetable oil for frying
Confectioners' sugar
currant jelly sauce
Heat about 6-inches of oil to 340F in a fryer. Dip sandwiches in batter to cover all surfaces. Deep fry sandwiches until golden brown, turning as needed. Remove from oil, take out toothpicks, sprinkle sandwiches with confectioners' sugar. Serve with currant jelly sauce.
 
Here is the recipe for Disneyland's Clam chowder. I have not tried making this yet, but I want to.


Disneyland's Clam Chowder

Ingredients
1/4 lb. butter
1 1/2 cups chopped onion
1 cup chopped celery
3/4 cup all purpose flour
1 quart milk
1 1/2 cups chopped clams, reserving juice
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 cube instant chicken broth
3/4 tsp. salt
1/4 tsp. white pepper
1/4 tsp. thyme
1 1/2 cups cooked and diced potatoes

Directions
In a medium saucepan, melt butter; add onions, celery, red and green peppers and thyme. Sautee until tender. Add flour and chicken broth cube; cook over low heat for 5-10 minutes.
Add milk and reserved clam juice. Simmer for 20 minutes, stirring constantly. Add clams, potatoes, salt and pepper. Simmer for 5 minutes over low heat.
Yield: 4-6 servings.
 

Here is the wonderful mint julep


Disneyland Mint Julep

1 cup Sugar
3 tsp Lime Juice Concentrate
3 cups Soda Water
6 tbsp Creme DeMenthe*
6 oz. thawed Lemonade Concentrate

Dissolve sugar into soda water. Add lime juice and lemonade and bring to
boil. Remove from heat and add Creme DeMenthe. Chill.
To serve, combine 3 parts syrup to 5 parts water.

Yield: Approx. 2/3 gal.

Does anyone have the recipe or know where to get the Sweet Zulu sauce they use at the Bengal BBQ for the Bengal Beef Skewer?
 
Here is the receipe for the loaded baked potato soup. I just made it yesterday. :)

Ingredients:
4 large Russet Potatoes (peeled and small diced)
4 medium Red Potatoes (small diced)
6 oz (2 large stalks) Celery (small diced)
6 oz (1 large or 2 small) Carrots (peeled and small diced)
I medium yellow Onion (small diced)
2 oz unsalted Butter
1 lb. bacon (rough chopped) (*tip: place slices of bacon in the freezer to make it easier to cut. Will slip less)
16 oz Chicken stock or vegetable stock
32 oz Heavy Whipping Cream
2 oz Flour
1 oz vegetable oil
Salt/pepper to taste
*Small dice is ¼ In. x ¼ In.

Garnish with these items If desired:
Chives (chopped)
Bacon Bits
Sour Cream
Cheddar and Montery Jack Cheese (shredded)

PROCEDURE:
1.Place stock pot, (6-8 quart pot) over medium heat. Add the vegetable oil, butter and bacon. Start rendering the bacon (process of releasing the fat through cooking). The bacon will start to release its fat. Do not allow it to burn.
2.Cook bacon until crispy, remove and set aside on a paper towel; leaving the fat from the bacon in the pan. Add onions, carrots, and celery. Traditionally these 3 items are called the MIREPOIX. Sweat the mirepoix until the onions turn translucent. Add potatoes and cook for 4 minutes. Add the flour to make roux. Cook roux until blond in color, (about 5 to 7 minutes), while stirring constantly. Add chicken stock and half of the bacon back into the pan. (Reserve the rest of the bacon for garnish.) Season with salt and pepper.
3.Turn the heat to medium high, bring the soup up to a simmer and cook for 15 minutes or until the potatoes are soft and tender. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.
4.You can adjust the thickness by adding water or stock for a thinner soup. It should have a creamy consistency. Adjust your seasonings.
5.Garnish with your desired toppings.

Not a problem. I have the recipe for the bengal beef skewers at home on my computer. I will try to post it tonight.
 
Here are a few I copied:

Bengal BBQ
Tonkatsu Sauce (Chicken Marinade)

Ingredients

Teriyaki Sauce 1 cup
Soy Sauce 1 cup
Red Wine Vinegar 1 tblsp.
Brown Sugar 1 cup
Sherry Cooking Wine 1/2 cup
Whole Bay Leaf 2 each
Ground Black Pepper 1 tblsp.
Fresh Ginger Root 3 tblsp.
Fresh Garlic 2 tblsp.

Preparation

Mix ingredients and marinade chicken overnight in your refrigerator.

Bengal BBQ
Tahitian Sauce (Chicken)

Ingredients

Whole Cloves 4 each
Red Wine Vinegar 1 tblsp.
Catsup 1 cup
Crushed Pineapple 1/2 cup
Pineapple Juice 1/2 cup
Brown Sugar 1/2 cup
Soy Sauce 1/2 cup
Orange Juice Conc. 1/4 cup
Water 3 tblsp.

Preparation

Simmer cloves in vinegar for 5-10 minutes. Strain cloves and add other ingredients.
Bring mixture to slow boil over medium heat.

*Bengal BBQ
Korean Sauce (Beef)

Ingredients

Soy Sauce 1 cup
Water 1 1/2 cup
Ground Black Pepper 1 tblsp.
Sesame Seed Oil 3 tblsp.
Ground Red Pepper 1 tsp.
Cayenne Pepper 1/2 tsp.
Fresh Garlic 1 tblsp. (I use 1 tsp powdered)
Corn Starch 1 tblsp.

Preparation

Mix all ingredients except corn starch.
Bring to a slow boil over medium heat.
Add corn starch to thicken.

I am on my way out right now--if interested, I also have recipes for crab cakes, chocolate mousse, au gratin potatoes and pork loin from Blue Bayou I can post later.

* This is the spicy beef sauce and it's yummy. I have added my own touches as follows:
1/3 c apricot-pineapple preserves
1/8 tsp ginger
1/4 tsp cinnamon
1/8 tsp cloves

Onion, thin sliced

Cream Sauce for the Potatoes

Heavy Cream 2 cups
Whole Thyme (dry) 1/4 tsp.
Fresh Garlic (chopped) 2 tbs.
Salt 1-1/4 tsp.
Pepper 1-1/4 tsp
Butter 1 tbs.
Parmesan Cheese (grated) 4 oz

Mix onions and potatoes and put into baking dish. Mix cream, garlic, salt, pepper, and thyme leaves. Pour mixture over potatoes and onions and cover. Put in a pre-heated 350F degree oven, and bake for about one hour. When potatoes are tender, remove from oven and sprinkle with parmesan cheese. Put back in the oven uncovered and bake for ten minutes more until brown.


I've used this recipe many a time & it turns out really well! The key is using good Parmesan cheese (not the stuff in a shaker can). It's also really yummy with pieces of ham in it (a good way to use up leftovers!)

Better make a double recipe...they're so good, everyone will want seconds! Just be sure to use real grated Parmesan, not the kind in a shaker...the real Parmesan forms a "crust" that is soooo yummy :wizard:
 
I made the Bengal Beef spicey beef sauce this summer. It was very good! Here is a pic.

I even made tiger tales from the seasoned pizza dough from Trader Joes.
I have also made the sauce a little less spicey and used it with Chinese stir fry. Yum!
