Disneyland During Christmas

My wife and I are going back to Disneyland after 4 years (been going to Disney World the last few years) and this is our first time during the holidays, so we have a couple questions (will be in park Wednesday, Thursday, Friday and Saturday and have until mid day Sunday to roam)...

What kind of hours can we expect?
Where do we HAVE to eat during the holidays? (We are hitting up Blue Bayou for sure!)
We are staying off site (right across the front gate), is it best to eat outside park or is it good inside park?
At Disney world we had to reserve dining MONTHS in advanced... Same thing with disneyland at this time if year?
Any must see shows? Is the Aladdin show still around from California adventure? We liked that one a lot...
Are there usually any rides that are down this time? Water rides?

Aladdin is still there.

You can only make meal reservations up to 60 days in advance, but I don't know how necessary that is for Christmas season.

As the PP said, meal reservations can be made 60 days in advance. Depending on when during the month you will be going, it can get quite busy. We always make reservations for our must-haves so we aren't disappointed. In my opinion, Blue Bayou, Carthay Theater Restaurant, and Cafe Orleans are easier with a reservation.

The hours will vary depending on when in December you plan to go.

Only long term (9+ months) refurbs are down during Christmas. It's way, high, high, prime season, so they don't want attractions down. I'm assuming you're going to be there the actual week of Christmas. In 2013 DL closed for capacity mid-afternoon all but I think 2 days during the 2 week Christmas break. The lines are generally not as long at MK in Florida because there's so many more attractions in DL than MK, but the park is smaller, so getting around in the small walkways can be very difficult
