Disney World park plans 2/27-3/4

We are staying at the Swan Reserve 2/27-3/4
We have 5 park days family of 5, kids 11,12,14(they have never been). We want to go to all 4 parks. Sunday we do not plan to attend a park. I know for sure Wednesday at MK for the evening hours. We plan on going to the parks early entry. Any advice on how to plan the other days? Is Epcot worth going Monday for evening hours or Thursday or Friday for flower and garden festival? Should we plan 2 days at Epcot to be able to do both? Or two for MK? We are leaving Friday evening so Friday won’t be a full day. Thanks!

Monday 2/28 is the last day of the Art's Festival, in case that interests you.
3/2 will be fairly busy at the Flower and Garden Festival because it's usually full of bloggers and vloggers covering all the food choices and the decorations for their followers.
So I'd pick going to it on the 3rd personally.
